A creamy iced coffee with rich brown sugar syrup, espresso and milk, finished with a soft vanilla foam on top. Sweet, smooth and café-worthy, but easy enough to make at home in minutes.
Ingredients
Brown sugar syrup
- 2 tbsp brown sugar
- 2 tbsp water
- ¼ tsp vanilla extract
- Pinch of cinnamon
- Pinch of sea salt
Iced latte
- 1–2 shots espresso, or ⅓ cup strong brewed coffee
- ¾ cup milk of choice
- Ice
Brown sugar cream
- ¼ cup thickened cream, pouring cream or barista oat milk
- 1–2 tsp brown sugar syrup
- ¼ tsp vanilla extract
Method
- Add the brown sugar and water to a small saucepan over low heat. Stir for 2–3 minutes, until the sugar dissolves and the syrup looks glossy. Stir in the vanilla, cinnamon if using, and a tiny pinch of salt. Set aside to cool slightly.
- For the brown sugar cream, whisk or froth the cream with 1–2 teaspoons of the syrup and vanilla until thickened but still pourable.
- Fill a glass with ice. Add 1–2 tablespoons of brown sugar syrup, then pour in the espresso or strong coffee. Add the milk and stir gently.
- Spoon or pour the brown sugar cream over the top so it floats like a soft cold foam.
- Serve immediately.
